Chlorophyll is a type of green pigment contained in higher plants and all other organisms capable of photosynthesis. There are many kinds of chlorophyll, such as chlorophyll a, b, c, and d, as well as bacterial chlorophyll and chlorophyll chlorophyll, etc. The food-related ones are mainly chlorophyll a and b in higher plants. The common feature of the structure is that the structure includes four pyrroles composed of porphyrin rings, and the four pyrroles are combined with metallic magnesium.
Sodium copper chlorophyllin, also known as copper sodium chlorophyllin salt, is a kind of metal porphyrin with high stability, dark green powder, strong coloring power, bright color, its aqueous solution is blue green clear transparent liquid, there is precipitation when calcium ions exist. When the pH value of its aqueous solution is less than 6, powdery precipitate appears at the bottom of the dye solution, which is due to the fact that the sodium copper chlorophyllin molecules with planar spatial structure tend to aggregate under acidic conditions. Sodium copper chlorophyllin can be extracted from spinach or silkworm dung with acetone or ethanol, and produced by adding appropriate amount of copper sulfate and magnesium atoms in chlorophyll porphyrin ring replaced by copper. Sodium copper chlorophyllin has been approved for use in food by international health organizations, and it is also the edible natural pigment approved to be used in China. It has been included in the Chinese GB2760-1996 Hygienic Standard for the Use of Food Additives. Widely used as food additive, cosmetic additive, food colorant and other fields. According to world Health Organization (WHO) documents, 750 mg / 60 kg of body weight can be consumed daily.
1. Chlorophyll is insoluble in water but soluble in ethanol solution; Copper chlorophyllin sodium salt is soluble in water, slightly soluble in ethanol and chloroform, slightly soluble in ether and petroleum ether as a food additive, copper chlorophyllin sodium salt is obviously better than chlorophyll.
2. Chlorophyll is a fat-soluble pigment, which has a very narrow range of applications. However, sodium copper chlorophyllin belongs to water-soluble pigment and is widely used.
3. Sodium copper chlorophylls and sodium zinc chlorophylls are less affected by PH value and temperature, but their light resistance is poor, and further strengthening their light resistance remains to be studied.
4. Metal ions Except Fe2+, Cu2+ and Fe3+, Al3+, Na+, K+, Ca2+, Mg2+ and Zn2+ had little effect on the stability of theechin.
5. Common food additives such as sodium benzoate, salt, vitamin C and glucose have no adverse effect on the stability of pigment. Vitamin C also has a certain protective effect on its stability.
6. Tea green pigment has good antioxidant and reductive properties.

2.Cosmetic Field. Can be added to cosmetics as coloring agent. Copper chlorophyllin sodium for dark green powder, odorless or slightly smelly. The aqueous solution is transparent and green, which deepens with the increase of concentration. It is resistant to light and heat and has good stability. 1% solution pH is 9.5~10.2, when the pH is below 6.5, calcium precipitation can be generated. Slightly soluble in ethanol. Acidic drinks are prone to precipitation. Strong light resistance than chlorophyll, heating to 110℃ above
decomposition. Due to its stability and low toxicity, sodium copper chlorophyllin is widely used in the cosmetic industry.
