Turmeric extract powder is produced from the root of turmeric, biologically called curcuma longa. It is orange yellow crystal powder with bitter taste. The main active ingredients of the extract are curcuminoids, which contain several compounds, including curcumin, demthoxycurcumin, bisdemethoxycurcumin and so on. Curcumin is one of the most important substances in curcuminoids. The main specifications of turmeric root extract are curcuminoids 95% (curcumin content 70%-80%) and curcumin 10%. Curcuminoids 95% is liposoluble, and it is often used in supplements or pharmaceuticals; while curcumin 10% is water soluble, it is good to used in drinks and cosmetics.
Turmeric is a commonly used medicine, and its main bioactive components are curcumin and volatile oil. The former has hypolipidemic, anticoagulant, antioxidative, and choleretic effects; the latter mainly plays an anti-inflammatory, antibacterial and antitussive effect.
There are various methods for extracting curcumin, and each has its own characteristics in the process flow, but in general, it is divided into two steps: extraction and refining. In recent years, many new technologies and processes have been applied to the extraction and refining process of curcumin. Compared with the traditional extraction process, the enzymatic extraction of curcumin from turmeric can increase the yield by 8.1%. The extraction process conditions were: enzymatic hydrolysis temperature 50℃, pH 4.5, time 120 min, and enzyme concentration 0.35 mg/ml. Taking the HPLC method as the determination method and the extraction amount of curcumin as the investigation index, the orthogonal test method was used to optimize the extraction process. times, 40 min each time.

Curcumin has been widely used in the food industry as a common natural pigment for a long time. It is mainly used for the dyeing of canned food, sausage products and soy sauce products. The amount of curcumin used depends on normal production needs. The product form of functional food with curcumin as the main component can be general food or some non-food forms, such as capsules, pills or tablets. For general food form, some yellow pigmented foods can be considered, such as cakes, sweets, beverages, etc.
Curcumin is a food additive approved by the Codex Alimentarius Commission of the Food and Agriculture Organization of the United Nations (FAO/WHO-1995).
Curcumin also has antiseptic properties. At present, curcumin is widely used in the food industry as a condiment and a pigment at home and abroad. In medieval Europe, turmeric can replace the precious spice saffron, and it is also an indispensable traditional curry food in Indian life, a common condiment in kebabs in the Middle East, a common condiment in Persian and Thai dishes, and a common coloring in mustard sauce. Curcumin used for food coloring is mainly divided into four categories: water-dispersible turmeric oil, water-dispersible purified turmeric, oil-soluble purified curcumin and purified turmeric powder.
